DAVID THORNTON - HEAD CHEF WHITE SALT
I came to Perth for the first time aged 19 from the north east of England, fell in love with Australia and finally settled here with my family two years ago after an 18 year wait. I have worked at White Salt for almost two years as sous chef and now as Head Chef. Throughout my working life my constant theme has always simply been my love for food; the excitement that a good piece of meat, a fresh fish or a new ingredient gives me. Finding out a new trick of the trade or cooking method can be genuinely exciting and reassures me that one of the most rewarding experiences of being a chef is to keep moving forward and learning. These days though my greatest inspiration is the wealth of produce and ingredients that Australia offers. Australia’s diverse culinary influences from Europe to Asia naturally inspires good cooking. Our philosophy here at White Salt is to create simple, tasty and well cooked food using the best quality produce. Our menus change seasonally and we offer specials which aim to maximise the freshest available ingredients we have that week. With our young and enthusiastic brigade of chefs we are constantly trying to update and improve our food. Most importantly we aim to make whatever we cook the very best it can be.
